dehydrated onion flakes

Dehydrated Onion Flakes: A Sustainable and Reliable Ingredient for Food Manufacturers

Introduction

As part of the fast food manufacturing business, ingredients should be affordable, dependable, and environmentally friendly. Dehydrated onion flakes and onion powder are now common processed food ingredients, which provide long shelf life, convenience of use, and uniform flavor. Because of more emphasis on sustainable sourcing and effective manufacturing, food producers more and more choose these dehydrated versions instead of fresh onions.

Sustainability Advantages

Less Food Waste

Raw onions possess a short lifetime and perishability that causes them to be wasted. Dehydrated onion flakes products, however, expand consumption while reducing wastage, enabling businesses to achieve the best out of available resources.

Lowered Carbon Footprint

It is easier to ship than raw onions, hence reducing fuel consumption and emission. Also, dehydration cuts back on storage requirements, saving energy.

Water Conservation

Dehydration really reduces the volume of water that is present in onions, and this ends up reducing water usage by a lot. With the knowledge that farming is the largest consumer of the world’s water, using dehydrated onions helps in the management of water in a sustainable manner.

Reliability in Food Manufacturing

Consistency in Flavor and Quality

Dehydrated onion flakes and powder have a consistent taste, unlike fresh onions, which can be variable in pungency and taste depending on season and geography. Consistency is important for mass food production when taste predictability is necessary.

Longer Shelf Life

Fresh onions need refrigeration and handling, but dehydrated onion flakes can be stored for a long time at room temperature. This implies that there is a guaranteed supply chain with less dependence on seasonality.

Convenience and Efficiency

Dehydrated onion flakes products eliminate the convenience of peeling, chopping, and cooking preparation, achieving time and labor saving for food processing companies. They are also compatible with dry mixes, spices, seasonings, soups, sauces, and ready-to-eat foods.

Turmeric

Hero Herb: Why We Need to Focus More on Turmeric

Turmeric, that golden spice found in Indian and Asian foods for centuries, is now, belatedly, gaining worldwide recognition as having truly astonishing benefits for health. This ordinary-sounding root vegetable, called scientifically Curcuma longa, is actually an incredible medicinal herb that has the potential to alter our well-being.

The Power of Curcumin

The secret to turmeric’s health advantages is the active compound of turmeric, which is curcumin. Curcumin is a very strong anti-inflammatory and antioxidant agent, and it has been reported to help in the prevention of chronic diseases such as heart disease, arthritis, and even cancer.

But curcumin’s poor bioavailability in the body has been a challenge. Paired with black pepper, which has piperine, its absorption is significantly improved.

Health Benefits of Turmeric

  1. Natural Anti-Inflammatory

Chronic inflammation is responsible for numerous diseases such as Alzheimer’s, diabetes, and cardiovascular disease. The anti-inflammatory effects of it can naturally prevent and cure these diseases.

  1. Brain Health

Curcumin has been shown to improve brain-derived neurotrophic factor (BDNF), a growth hormone that encourages brain activity. This can prevent neurodegenerative diseases such as Alzheimer’s and depression.

  1. Boost in Immunity

Turmeric, through its antioxidant and antimicrobial properties, supports immune system fortification and helps the body resist infection better.

  1. Cardiovascular Well-being

Scientific studies prove that curcumin improves endothelial function, regulating blood pressure and clotting, reducing the risk of cardiovascular disease.

Green Banana Powder

Effect of Green Banana Powder Fibre Consumption on Host Gut Microbiome

The gut microbiome is important for overall health, with impacts on digestion, immune function, and even mental health. Dietary fibre is an important determinant of gut microbial communities, and green banana powder (GBP) has emerged as a rich source of resistant starch and prebiotic fibre. This blog discusses the impact of GBP fibre intake on the host gut microbiome and its possible health benefits.

What is Green Banana Powder Fibre?

Green banana powder is made from green bananas and is rich in resistant starch, a dietary fibre that resists small intestine digestion and is delivered to the colon intact. This characteristic renders it a better prebiotic, providing nutrients to the good gut bacteria.

Effect on Gut Microbiota Composition

Studies have shown that the consumption of GBP fibre can positively alter the gut microbiota by increasing beneficial bacteria such as Bifidobacterium and Lactobacillus. These probiotic bacteria are responsible for enhanced gut well-being through stimulation of fermentation activity, generation of short-chain fatty acids (SCFAs), and intestinal integrity. Further, the intake of GBP has been associated with reduced pathogenic bacteria, hence the promotion of a healthier microbial flora.

In the last few years, the global shift towards natural and organic sweeteners has greatly increased the demand for organic jaggery powder. 3. Higher Health Awareness: With growing health awareness across the globe, customers are more concerned about their food. Customers are more inclined towards organic and pesticide-free foods. Jaggery powder is the perfect solution for the demand of natural sweeteners.

Market Demand of USA, Dubai, and Australia

1. USA: With increasing demand for organic food, the demand for jaggery powder has also seen a boom. People with health concerns, vegans, and those seeking unprocessed sweeteners are fueling the market. Organic grocery stores and online stores alike are now stocking organic jaggery powder to fill customer demands.

2. Dubai: Traditional sweeteners are strong in cultural terms in the Middle East, and Dubai as an international center expects a strong demand for organic high-end products. Organic jaggery powder is gaining more acceptance in health food stores and supermarkets as an alternative to refined sugar.

3. Australia: Australians are highly interested in clean eating and healthy food. Organic food in Australia is also doing well in terms of sales, and jaggery powder is slowly but steadily being welcomed by health nuts, nutritionists, and healthy individuals seeking an alternative to sugar.

The increasing organic jaggery powder demand from these countries presents favorable prospects for producers and exporters. The most prominent drivers of such a trend are increased consumer awareness, expansion in the e-commerce industry, and global movements toward organic, green food products.
Companies to come into this market need to focus on quality certification, effective marketing strategies, and wide distribution channels to meet the rising demand in the USA, Dubai, and Australia.

UPASI: Tea Histroy

Brewing Progress: UPASI’s Influence on Tea’s Evolution in the 20th Century

The United Planters' Association of South India (UPASI)

The United Planters’ Association of South India (UPASI) was founded in 1893 as an apex body of different district planters’ associations. These associations had originally been constituted in the major tea and coffee-growing areas of the Madras Presidency, Travancore, Coorg, and Cochin. UPASI was formed to give a collective voice to planters in South India, enabling their common interests in policy advocacy, agricultural development, and economic viability.

The establishment of UPASI was precipitated by an event in 1892 when the Government of India dismissively turned down a petition filed by the South Indian Planters’ Association. The petition, signed by signatories of 13 district planters’ associations, called for redress of grievances that were at the core of the plantation industry. The rejection of their appeal, described as ‘curt and discourteous,’ provoked general discontent among the planters, and ultimately led to a decisive meeting at Mayo Hall in Bangalore on August 28, 1893.

The meeting, titled the United Planters’ Conference, set the stage for UPASI, with its headquarters located in Coonoor, a strategic point in the Nilgiri Hills renowned for teas plantations.

Since its establishment, UPASI has been a crucial agency in the development of the tea and coffee industries in South India. UPASI has remained engaged with research, policy advice, and programs aimed at raising production efficiency and market development. UPASI has made important contributions to technological innovations and the adoption of sustainable practices in plantation agriculture, such that South Indian tea has a reputation for excellence and quality.

Tamil Nadu Tea Plantation Corporation (TANTEA)

The Tamil Nadu Tea Plantation Corporation, popularly referred to as TANTEA, is among the largest tea plantation organizations in India, with the largest extent under clonal tea cultivation. TANTEA controls about 2,770 hectares of tea estates in the Nilgiris and the Nilgiri-Wynaad districts and contributes heavily towards India’s tea production and generation of employment.

The origin of TANTEA goes back to 1968 when it was first formed as a Forest Development Project. The project was conceived with the primary objective of providing employment to Indian-origin individuals who had been repatriated from Sri Lanka under the Sastri-Srimavo Pact of 1964.

This pact, signed between the Sri Lankan and Indian governments, allowed Indian-origin workers who had been working in Sri Lanka’s tea plantations for generations to return. The project sought to bring these workers into the Indian tea sector by giving them livelihood in newly established tea plantations.

It was formally turned into the Tamil Nadu Tea Plantation Corporation (TANTEA) in 1976, continuing to institutionalize its functions to assist repatriated families as well as augment the economy of the state. TANTEA has employed almost 2,500 Sri Lankan-migrating families directly over the decades, ensuring that they remain stable financially and become integrated socially.

Apart from its socio-economic impact, TANTEA played a key role in the spread of sustainable tea cultivation practices. With its focus on clonal teas varieties, which are renowned for their high production and quality, the company has consolidated Tamil Nadu’s place in the competitive tea industry.

TANTEA’s tea estates are also a model for the adoption of scientific farming practices, nature conservation initiatives, and worker welfare schemes.

The INCOSERVE and Small Growers' Support

Taking into consideration the plight of small tea growers in Tamil Nadu, the state government formed the Tamil Nadu Small Growers Industrial Cooperative Tea Factories Federation Ltd., popularly referred to as INCOSERVE. The main objective of the same was to safeguard the interests of small tea cultivators by offering them infrastructural and economic help.

The roots of INCOSERVE trace back to 1962 when the first cooperative tea factory was set up under its direction. Ever since, INCOSERVE has been at the forefront of empowering small tea farmers by providing them with access to vital services like warehousing, bulk procurement of farm inputs like fertilizers and pesticides, and efficient marketing assistance. By functioning on a cooperative model, INCOSERVE affords small-scale tea producers a fair opportunity to compete in the larger tea industry.

Under the umbrella of INCOSERVE, a chain of cooperative factories—popularly known as Indco factories—has been established in Tamil Nadu. These factories offer small tea growers processing and packaging facilities for their crop so that they are able to keep quality standards high and profitability higher. Currently, 15 Indco factories are functioning, each contributing to the economic development of scores of small-sized tea farmers.

One of the major achievements of INCOSERVE has been in market linkages and collective bargaining. Through the aggregation of the produce of small growers and negotiation for improved prices, INCOSERVE has improved their income and stability. The cooperative model also promotes community involvement and equitable distribution of profit, making tea farming a sustainable livelihood for thousands of growers.

The Nilgiris Tea Saga: A Timeless Journey Through History

The Nilgiris, with its rolling hills of green and breathtaking views, is home to some of India’s finest tea gardens as well. But the story of tea growing here is as interesting as the tea itself. The tale of Nilgiri tea begins in the mid-19th century, a story of colonial enterprise, local initiative, and a most unexpected group of contributors—Chinese prisoners of war.

Chinese Prisoners of War and Their Contribution to Tea Plantation

The introduction of tea into the Nilgiris got an unusual turn during 1859 when Chinese war prisoners were brought from China to India. These Chinese POWs were quartered in two camps—One at Naduvattam and another within the Thiashola reserve forest. The local tradition states that these Chinese POWs played an active role in helping early planters both in cultivation and processing tea at Thiashola.

The experience of the Chinese with tea culture was instrumental in the formation of the early plantations of the region. Since China had a long history of tea culture, the knowledge of the prisoners is said to have had a great influence on the methods followed in Nilgiri tea production.

Kotagiri’s Tea Legacy and the Role of Miss MBL Cockburn

As the Thiashola area was witnessing tea estates bloom with Chinese workforce, yet another prominent development was occurring in Kotagiri. The area witnessed one of its first tea estates being planted by Miss MBL Cockburn, a daughter of M D Cockburn. She established tea cultivation with the help of Chinese laborers around the region of the Kotagiri Club.

The Cockburns were already well known for their work in the Nilgiris, and Miss Cockburn’s role in early tea production was a milestone. Her input, together with the expertise of the Chinese laborers, laid the basis for Kotagiri to be one of India’s leading tea-growing regions.

The Lasting Legacy of Early Tea Pioneers

The combined input of early planners, Chinese war captives, and native labourers laid the foundation for a thriving tea business in the Nilgiris.

Tea cultivation grew with time, and Nilgiri tea established itself as having a characteristic flavor, briskness, and fragrance. Nilgiri tea is now renowned internationally, and its fame continues to build.

The historical contribution of Chinese prisoners in Nilgiri tea estates might not always be well known, but their role is an integral part of the rich tea history of the region. As we enjoy a refreshing cup of Nilgiri tea, we are also enjoying a slice of history forged through resilience, innovation, and cross-cultural cooperation.
